Can genetically engineered honey be a Rosh Hashanah symbol? How can bees, considered non-kosher, produce kosher honey? These are just some of the questions our 8th graders in the Israel STEAM program recently explored. Inspired by Israeli startup Bee-io, which creates lab-produced honey without bees, the students researched honey’s properties, its role in Judaism, the global bee population decline, and the innovative solution Israeli scientists developed. Collaborating with other middle school departments, we also explored bee communication, hive engineering, and Israel’s agricultural heritage.
